Tasting - The bony, mineral verve of Assyrtiko layered up with all kinds of citrus fruit notes. There's a tangy, textural thing at work to ensure this isn't just an acid bomb though. Sancerre and Chablis lovers need to get involved. 

FYI: While Santorini remains ground zero for Assyrtiko the vine itself is proving to be adaptable to other areas too. The vines for this wine are around 30km from Athens.
