L-AUTRE HUITRE
Domaine de Font Mars has been in the same family since 1864, tucked away just outside Mèze in the Languedoc. The clue’s in the name — “Mars” as in the Roman god, because this land was once a Roman settlement, and “Font” for the natural springs that still bubble through the estate. Today it’s run by Philippe de Clock, whose Belgian winemaking roots go back generations. The estate’s speciality is Picpoul de Pinet, grown a stone’s throw from the Etang de Thau, the oyster capital of France. History, heritage, Romans and oysters — Font Mars has them all, bottled with a dash of southern French sunshine.
