COLIN'S NOTE
A portion of this wine was fermented using the ‘carbonic maceration’ technique. This involves leaving whole bunches in tank with carbon dioxide until the berries begin to ferment from the inside out. It’s common in Beaujolais and gives a super fruity and soft style of wine.
